(Sage and Anchovy Fritters) Recipe

Origin: Tuscany      Period: Traditional

Aka Involtini di Salvia is a Tuscan anchovy fritter; full of umami flavour which makes it very moreish in taste.

Ingredients

Anchovy fillets
1 good-sized bunch fresh sage
1 egg, beaten
sifted flour, lightly seasoned

(Sage and Anchovy Fritters) Preparation:


Method:

Check the anchovies for saltiness and soak in water if they are too salty. Once the anchovies are ready sandwich each fillet between two sage leaves and secure with a cocktail stick. Prepare a deep fat fryer by heating to 180°C then dip the involtini first in egg then in the flour. Drop in the hot oil and fry until puffed-up and crisp. Serve immediately.
