Saffron and Raisin Couscous with Mint Recipe

Origin: Algeria      Period: Traditional

Ingredients:

500ml water
1/2 tsp saffron
1 tsp extra-virgin olive oil
1/2 tsp salt
400g couscous
50g raisins
3 tbsp freshly-chopped mint

Saffron and Raisin Couscous with Mint Preparation:


Method:

Bring the water to a boil in a saucepan and add the saffron. Remove from the heat and allow to infuse for 30 minutes. Return to the heat, bring to a boil and add the olive oil, salt and couscous. Remove from the heat, cover and allow to stand for 30 minutes. Tip onto a serving plate, top with fresh mint and serve.
