Riebele Recipe

Origin: Germany      Period: Traditional

Ingredients

210g flour
1 egg
120ml (about) iced water
1 tbsp salt


Riebele Preparation:


Method:

Combine the flour, egg and salt to form a dough (add iced water if needed, but the dough must be hard) and and form in to Riebele. Riebele are German, style noodles that are made by grating the dough through the coarse part of a cheese grater. When making Riebele ensure that you rub downwards over the grater only.

Allow the pasta to dry thoroughly and use as an addition to soup stocks. Riebele should only be added at the end of cooking, as it should not be boiled for more than 5 minutes.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
