Ingredients
1 onion, diced
Rice and Mushrooms Preparation:Method:Melt the butter in a heat-proof casserole and use to fry the onion until soft and translucent (about 8 minutes) then add the mushrooms and rice. Stir until the rice grains are coated in the butter then stir-in the stock and season to taste with salt and black pepper. Bring to a simmer then cover and transfer to an oven pre-heated to 180°C. Cook for between 20 and 30 minutes, or until the rice is tender and almost all of the stock has been absorbed. Serve hot, garnished with dill or parsley. |
