Red clover is another of those oft-overlooked wild foods. But the flowers of this plant are tasty and very versatile, as this recipe will demonstrate. Ingredients:
450g brown or wild rice
Red Clover Rice Preparation:Method:Add the rice and 850ml water to a pan. Bring to a simmer, cover and cook until the rice is done (about 40 minutes). Mix-in the butter, clover flowers and season. Serve immediately. |
