Red Clover Rice Recipe

Origin: Britain      Period: Modern

Red clover is another of those oft-overlooked wild foods. But the flowers of this plant are tasty and very versatile, as this recipe will demonstrate.

Ingredients:

450g brown or wild rice
300g red clover florets (plucked from the flower head)
100g butter
salt and black pepper, to taste

Red Clover Rice Preparation:


Method:

Add the rice and 850ml water to a pan. Bring to a simmer, cover and cook until the rice is done (about 40 minutes). Mix-in the butter, clover flowers and season. Serve immediately.
