Ingredients:
225g mixed bell peppers, sliced
Ratatouille Preparation:Method:Using two frying pans, cook the peppers and onions in one and the aubergine and courgettes in another until they are soft (about 8 to 12 minutes). Combine both sets of ingredients together in one pan then add the garlic, oregano and tomatoes and season with salt and black pepper. Transfer to an oven-proof dish and finish cooking by baking for 10 minutes in an oven pre-heated to 180°C. This can be served as a vegetarian dish or can be used as a pizza sauce or as the basis for a casserole or a pasta dish. |
