Ratatouille Recipe

Origin: France      Period: Traditional

Ingredients:

225g mixed bell peppers, sliced
225g aubergines cut into 1cm cubes
225g courgettes, cut into 1cm cubes
225g onions, chopped
2 garlic cloves, finely sliced
1/2 tsp dried oregano, crumbled
6 plum tomatoes, blanched, peeled and chopped
olive oil to fry
salt and black pepper

Ratatouille Preparation:


Method:

Using two frying pans, cook the peppers and onions in one and the aubergine and courgettes in another until they are soft (about 8 to 12 minutes). Combine both sets of ingredients together in one pan then add the garlic, oregano and tomatoes and season with salt and black pepper.

Transfer to an oven-proof dish and finish cooking by baking for 10 minutes in an oven pre-heated to 180°C.

This can be served as a vegetarian dish or can be used as a pizza sauce or as the basis for a casserole or a pasta dish.
