Quatre Epices (literally, four spices) is a traditional spice blend from pre-Revolutionary France. Though not as common today it can be used as a condiment in place of black pepper and can be substituted in any recipe that calls for black pepper where it gives a more balanced tone of flavours. Ingredients:
1 heaped tbsp black peppercorns
Quatre Epices Preparation:Method:Preparation is simplicity itself. Add the black pepper and cloves to a coffee grinder and grind to a smooth powder. Spoon into a tight-lidded jar, add the nutmeg and ginger and mix well. This will store for several weeks in a cupboard. |
