Ingredients:
100g butter or margarine, softened
Pumpkin Spice Cookies Preparation:Method:Combine the butter, egg whites and pumpkin in a bowl, beating until smooth and evenly mixed. Meanwhile sift the flour, salt, baking powder and spices into a separate bowl then stir-in the sugar. Add the dry ingredients to the wet ingredients and stir until just moistened then drop heaped tablespoons of the mixture 5cm apart on a lightly-greased baking tray. Place in an oven pre-heated to 170°C and bake for about 15 minutes, or until just firm to the touch. Remove from the oven and allow to cool on the baking tray for 5 minutes then transfer to a wire rack to cool completely. |
