Plantain Cream of Wheat Bread Recipe

Origin: Liberia      Period: Traditional

This is a classic Liberian cake made with cream of wheat (farina). It's essentially the same as the Banana Cream of Wheat Bread but uses plantains and honey instead of banana. This is the version that my wife (a native Liberian and a real honey addict) makes.

Ingredients:

280g cream of wheat (farina or ground wheat)
1/2 tsp salt
1 tbsp sugar
1 tsp ground nutmeg
1 tsp ground cinnamon
300g ripe plantains, boiled for 30 minutes, until soft and mashed
3 tbsp runny honey
2 eggs
360ml water
240ml oil

Plantain Cream of Wheat Bread Preparation:


Method:

Combine the cream of wheat, salt, nutmeg and cinnamon in a bowl then gradually add the plantains, honey, eggs, water and oil. Blend thoroughly to combine then turn the batter into a well-greased 1kg loaf tin. Place in an oven pre-heated to 170°C and bake for about 45 minutes, or until the top is golden and a skewer inserted into the centre of the cake emerges cleanly.

Allow to cool in the tin for 5 minutes then turn onto a wire rack and allow to cool completely before serving.
