Ingredients

4 plantains, peeled and sliced
1/2 tsp salt
1 tsp South African Curry Powder
1/2 tsp cinnamon
1/8 tsp cloves
360ml coconut milk

Plantains in Coconut Milk Preparation:


Method:

Combine all the ingredients (except the coconut milk) in a heavy pot. Add 240ml coconut milk and simmer over low heat until the plantain is tender and all the coconut milk is absorbed. Add more coconut milk if necessary. Serve immediately
