Pizza alla Marinara Recipe

Origin: Italy      Period: Traditional

As well as Pizza Neapolitana the simpl and classic Pizza alla Marinara is the other classic example of a Neapolitan pizza. It's a very simple pizza made from a bead base with a tomato sauce, garlic and oregano. It grew out of peasant food and is simple and cheap to make. The name, however, causes considerable confusion as many think that it should contain seafood (indeed many modern marinara pizzas (derived from the Italian mare for 'ocean' do contain seafood).

The traditional Pizza alla Marinara however is derived from the Italian word marinaio (for 'mariner'). Thus the Pizza alla Marinara is, literally 'Mariner Style Pizza' and reflects its peasant origins.

Ingredients:

1 bread dough pizza base
1 batch special pizza tomato sauce
olive oil, to drizzle
sea salt and black pepper, to taste
4 medium garlic cloves, peeled and thinly sliced
2 tsp fresh oregano, shredded

Pizza alla Marinara Preparation:


Method:

Turn the dough onto a lightly-floured work surface and roll into a 25cm diameter circle. Transfer to a greased baking tray then using your thumb and forefinger roll the edges of the pastry to form a rim. Cover and allow place in a warm spot to raise for 10 minutes. Spread the tomato sauce over the surface of the pizza then sprinkle with 2 or 3 good pinches of sea salt.

Scatter the garlic slivers and then the oregano over the top. Drizzle the olive oil over the top then season with black pepper.

Place in an oven pre-heated to 220°C and bake for about 12 minutes, or until the edges of the base are golden and crisp. Serve immediately.
