Pirinska Jachnija
(Mutton and Mushrooms) Recipe

Origin: Bulgaria      Period: Traditional

Ingredients:

450g mutton (or lamb), cubed
2 tbsp olive oil
2 large onions, chopped
440g tin of tomatoes, chopped
salt and freshly-ground black pepper, to taste
1 tsp paprika
500ml beef stock
75g mushrooms, sliced
75g olives, pitted and chopped
5 medium potatoes, diced
fresh parsley, chopped, to taste

Pirinska Jachnija
(Mutton and Mushrooms) Preparation:


Method:

Heat the oil in a pan and use to fry the mutton for about 5 minutes. Add the onions and continue frying for a further 5 minutes, or until the onions are just soft. Stir-in the tomatoes then season with the salt, black pepper and paprika. Fry for 1 minute then add the stock.

Bring the mixture to a boil, reduce to a simmer then cover and cook gently for 30 minutes, or until the mutton is just tender. Add the mushrooms and simmer for a further 10 minutes then stir-in the olives. Bring the stew to a boil then add the potatoes. Reduce to a simmer and cook for a further 20 minutes, or until the potatoes are tender.

Transfer to a serving bowl, garnish with the parsley and serve.
