Just as ginger beer is made in Liberian and ginger and pineapple drink combinations are popular a drink is also made from pineapple. Like the classic Liberian ginger beer this is not fermented (though a fermented version is prepared). Ingredients:
3 large ripe pineapples
Pineapple Beer Preparation:Method:Wash the pineapples thoroughly and using a sharp knife remove the base. Set the pineapple on a cutting board and use the knife to remove the peel. Slice the peelings into 3cm pieces and add these to a large (about 8 to 10l) pot. Slice the pineapple flesh off the core. Dice the flesh into 3cm pieces and add to the pot along with the peelings. Add just enough water to cover all the pieces then bring to a boil on high heat. Reduce the heat to medium and continue boiling until the pineapple skins are soft and easily mashed (about 40 minutes). Remove the pot from the heat then cover tightly and set aside over night to cool. The following day pour the mixture through a fine-meshed metal sieve, using a spoon to force as much liquid as possible through the sieve. Clean the sieve, line with muslin or cheesecloth and strain the liquid through this to remove any of the finer pineapple particles. Finally take up the cloth and use your hands to squeeze any remaining juice out of it. Transfer the juice to a jug then melt the sugar in a non-stick pan. Add the melted sugar to the juice about 100ml at a time. Stop when the juice is sweet enough for your own taste. Add the lime juice and stir to combine then chill in the refrigerator before serving. |
