Peanut Macarons Recipe

Origin: Sudan      Period: Traditional

Ingredients

200g unsalted peanuts
1 egg white
pnch of salt
60g caster sugar
1/4 tsp vanilla extract

Peanut Macarons Preparation:


Method:

Place the peanuts on a sheet of foil and brown gently under the grill then crush them in a pestle and mortar. Meanwhile beat the egg white with the vanilla extract and a pinch of salt then add the sugar and beat again until the egg white stands up in stiff peaks. Add the peanuts and gently fold in.

Line a baking tray with wax paper and grease very lightly. Drop small mounds of the peanut mixture on the wax paper then place in an oven pre-heated to 160°C and bake until the macaroons are golden (about 25 minutes). Take out of the oven and allow to cool completely before serving.
