Ingredients:
180g margarine
Peanut and Banana Cake Preparation:Method:Cream together the margarine and sugar until light and fluffy then add the eggs a little at a time, beating thoroughly after each addition. Now mash the bananas to a fine paste with the lemon juice and add to the egg mix. Gently sift in the flour and salt and fold into the mixture until you have a smooth and soft dough (use a little milk if it's too stiff). Turn the mixture into a 22cm cake tin that's been greased and lined and transfer to an oven pre-heated to 180°C. Bake for about 90 minutes, or until lightly browned in colour and a skewer inserted into the centre of the cake emerges cleanly. Allow to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely. |
