Fools are a common Liberian dessert, made from a combination of stewed fruit and custard. As many West Africans are lactose intolerant the custard is often instant custard powder made up with water instead of milk (my wife often makes it this way). It's quite tasty and the children love it. The recipe below stays true to the original, but is more a 'restaurant style' version, using a coconut milk custard. Ingredients:
6 fresh peaches, pitted and sliced
Peach Fool Preparation:Method:Combine the peaches, honey, cinnamon and water in a pan. Bring to a simmer and cook for about 20 minutes, or until the peaches are tender. Take off the heat and set aside to cool. Meanwhile, beat the egg yolks, cornflour and sugar in a bowl until light and creamy. Add the coconut milk to a pan and heat until just below boiling. Take off the heat and whisking constantly, pour about 250ml of the liquid into the egg mix. Whisk to combine thoroughly then add the egg mixture to the coconut milk remaining in the pan. Bring back to the flame and heat until the mixture begins to thicken then take off the heat and allow to cool for about 10 minutes. Add the stewed peaches to a food processor and puree until smooth then add to the coconut milk custard and whisk to combine. Allow to cool until lukewarm then spoon into glasses. Set these in the refrigerator to cool for at least 2 hours and serve. |
