Partridge with Blewits RecipeOrigin: Britain Period: Traditional |

This is an excellent autumnal starter that marries partridge with wild blewit mushrooms. This recipe is based on an individual dish, just multiply for more guests. Ingredients:
4 tbsp butter Partridge with Blewits Preparation:Method:Melt 2 tbsp the butter in an oven-proof pan and use to fry the partridge for about 5 minutes on each side (until nicely browned). Add the paprika and season to taste then add the wine and bring to a simmer. Transfer to an oven pre-heated to 180°C and roast for 15 minutes. In the meantime, melt the remaining butter in a separate pan and fry the blewits for about 10 minutes then add the chopped garlic. Plate-out the partridge, surround with the mushrooms and garnish with the parsley. |
