Partridge with Blewits Recipe

Origin: Britain      Period: Traditional

This is an excellent autumnal starter that marries partridge with wild blewit mushrooms. This recipe is based on an individual dish, just multiply for more guests.

Ingredients:

4 tbsp butter
1 partridge, plucked and cleaned
100g wild field blewit or wood blewit mushrooms, trimmed and sliced
100ml white wine
1 garlic clove, finely chopped
1 tsp paprika
1 tbsp fresh parsley, finely chopped
salt and freshly-groudn black pepper, to taste


Partridge with Blewits Preparation:


Method:

Melt 2 tbsp the butter in an oven-proof pan and use to fry the partridge for about 5 minutes on each side (until nicely browned). Add the paprika and season to taste then add the wine and bring to a simmer. Transfer to an oven pre-heated to 180°C and roast for 15 minutes.

In the meantime, melt the remaining butter in a separate pan and fry the blewits for about 10 minutes then add the chopped garlic. Plate-out the partridge, surround with the mushrooms and garnish with the parsley.
