Papaya with Port Wine Recipe

Origin: Angola      Period: Traditional

This is a classic Angolan starter that's very simple, but tasty despite that. We all know that papaya and limes have a special affinity for one another, but this dish also adds the sweetness of port in a nod to the Portuguese influence on this African country.

Ingredients:

2 very ripe papaya, sliced about 2cm thick and de-seeded
2 limes, quartered
a little Port wine
a twist of black pepper

Papaya with Port Wine Preparation:


Method:

Fan out the papaya pieces on a plate, add a twist of black pepper then sprinkle with a little port. Arrange the lime wedges on the plate and serve. (This starter serves 4.)
