Ingredients:
1.2kg firm papaya
Papaya Candy Preparation:Method:Peel and de-seed the papaya then slice into thin strips. Transfer to a pan along with a sugar and cook on a low flame until all the sugar dissolves. Continue cooking for 10 minutes then take off the heat and set aside for 30 minutes. After this time return the mixture to the flame. Cook over medium heat until the sugar begins to crystallize from the mixture. Continue cooking for 2 minutes then take off the heat. Allow to cool a little then take spoonfuls and shape into cones or other shapes on a lightly-oiled surface. Allow to cool completely before serving. |
