Pap Recipe

Origin: Lesotho      Period: Traditional

Pap is an Afrikaans word that simply means 'porridge' or 'gruel' and it's a word that's entered most sub-Saharan African languages. Many traditional Southern African dishes include pap, such as smooth maize meal (mealie meal) porridge (also called slap pap), and crumbly 'phutu' pap.

Ingredients:

300g maize meal (or polenta)
300ml water

Pap Preparation:


Method:

Bring the water to a boil and add the polenta until a stiff mixture is attained. Leave to simmer for 25 minutes, stirring every five minutes to prevent burning. Serve with a stew or a sauce such as Chakalaka.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
