Orange-Nut Couscous Recipe

Origin: Morocco      Period: Traditional

Ingredients

1 tbsp oil
200g coarsely-chopped almonds
1 onion, chopped
1/2 green bell pepper, chopped
500ml orange juice
2 cinnamon sticks
5 whole cloves
1/4 tsp turmeric
1/4 tsp hot chilli powder
1/4 tsp salt
1/4 tsp black pepper
400g couscous
45g raisins
100g spring onions, chopped

Orange-Nut Couscous Preparation:


Method:

Heat the oil in a large pan and fry the onions until lighty toasted. Add the onions and green pepper and fry until the onion is just soft. Add the orange juice, cinnamon sticks, cloves and spices. Bring to a boil then quickly stir-in the couscous and raisins. Cover and immediately take off the heat.

Allow to stand for five minutes (until all the liquid has been absorbed) then fluff with a fork and serve garnished with the spring onions.
