Ingredients
1 fully cooked boneless ham (about 2.2kg)
Orange Marmalade Ham Preparation:Method:Place a rack in a roasting pan and arrange the ham on this. Transfer to an oven pre-heated to 160°C and roast, uncovred, for 45 minutes. Meanwhile, combine the marmalade, sugar, mustard powder, ground cloves and nutmeg in a bowl. Stir to thoroughly mix then, when the ham has roasted for 45 minutes remove from the oven and score the top in a diamond pattern, cuting about 6mm deep into the fat. Inserta whole clove in the centre of each diamond then brush the ham all over with the marmalade mix (do this liberally). Return to the oven and bake for about 40 minutes, or until a meat thermometer inserted into the thickest part of the meat internal temperature of 60°C (this is when a knife inserted into the meat and held there for 30 seconds feels warm when touched to your lower lip). Transfer to a warmed serving plate cover with foil and set aside to rest for 15 minutes. Garnish with orange slices and parsley then serve. |
