Orange and Carrot Salad Recipe

Origin: North Africa      Period: Traditional

This is a classic North African combination of carrot and citrus juice that makes a refreshing and very tasty salad.

Ingredients

450g carrots, coarsely grated
juice of 1 orange
juice of 1 lemon
finely-grated zest of 1 orange
2 tbsp orange flower water
salt and icing sugar, to taste

Orange and Carrot Salad Preparation:


Method:

Wring out any excess moisture from the carrots with your hands then transfer to a bowl and mix in the orange zest, orange juice, lemon juice and orange flower water. Toss to combine then season with salt and icing sugar. Cover and chill for at least two hours before serving.
