Ingredients
675g flour
Old-fashioned Yule Cake Preparation:Method:Sift the flour, baking powder and salt into a warmed basin then chop the lard and butter and add to the flour mix. Rub the fats into the butter with your fingertips until the mixture resemble fine breadcrumbs then mix in the sugar and fruit. Add a little warm milk and make a paste with the yeast and 1 tsp sugar. Set aside to activate then add the remaining milk. Form a well in the centre of the dry ingredients and pour the milk and yeast mixture into this. Beat the eggs together and also add this to the bowl. Bring the ingredients together as a dough and knead for about 5 minutes. Cover and set aside for 20 minutes in warm space then press into a large well-greased loaf tin. Cover with a cloth and set aside in a warm place to rise for an hour. Place in an oven pre-heated to 170°C and bake for about 3 hours, or until the top of the cake is golden and a skewer inserted into the centre emerges cleanly.
