IngredientsThis is the classic Liberian method of making Oatmeal Pap (oatmeal porridge). My wife makes this quite frequently. The traditional Liberian way of making this means it's very sweet and I prefer mine Scottish style (with a little salt). It should also be noted that the cinnamon acts by tricking your tastebuds into thinking the dish is sweeter than it actually is, so add the cinnamon before the sugar and then sweeten to taste.
140g quick cook porridge oats
Oatmeal Pap Preparation:Method:Add the water to a pan and bring to a boil. Stir the oats into the water then reduce to a simmer and cook, stirring occasionally, for 15 minutes. Turn the heat off then stir-in the cinnamon and add sugar to taste before turning in to a single bowl. Like many African meals this is eaten communally, but you can spoon into individual bowls if you wish. |
