Ingredients:This is a traditional recipe from New Zealand dating to the 1950s. It comes from a collection of family recipes given to me by a friend, and which I am only just now getting the time to properly redact.
125g butter
Ginger Cake Preparation:Method:Cream together the butter and sugar until light and fluffy then add the eggs a little at a time and beat in to combine. Add the flour and spices and mix in. Dissolve the baking soda in 1 tbsp boiling water and add. Stir-in the milk and mix to form a smooth batter. Tip into a greased and floured springform cake tin then place in an oven pre-heated to 180°C and bake for about 40 minutes, or until the cake is golden brown and a skewer inserted into the centre emerges clean. Allow to cool and serve with tea. |
