Nyama ya Figo
(Beef Steak and Kidneys) Recipe

Origin: Tanzania      Period: Traditional

Ingredients:

1 whole beef (or ox) kidney
675g steak cut into 3cm pieces
60g butter
1 tsp curry powder
100g onions, sliced
2 tomatoes sliced
675g water
1 tsp salt
1/2 tsp cayenne pepper

(Beef Steak and Kidneys) Preparation:


Method:

Add the kidney to salted water, bring to a boil, cover and cook for about 30 minutes. Discard this first water, cover with fresh water and simmer for a further 30 minutes. Allow to cool then dice.

Add the butter to a pan and fry the steaks lightly (do not brown) then add the diced kidney and fry for a further 2 minutes before adding the curry powder.

Continue frying for a few more minutes then add the onions, tomatoes, water, salt and cayenne pepper. Bring to a boil, reduce to a simmer and cook for about 20 minutes.

Serve with Ugali or rice and Piri-Piri sauce.
