Nyma Choma
(Roast Meat) Recipe

Origin: East Africa      Period: Traditional

This is an East African dish and the name is derived from the Swahili word Nyama (meat). Nyama is also a Bantu word for 'meat' and is common to much of equatorial Africa. It should also be noted that what most Africans call 'roasting' we would call 'barbecuing' or 'grilling'.

Ingredients:

1.3kg beef short ribs
2 garlic cloves, minced
juice of 2 lemons
1 tsp curry powder (In Kenya, the commercial Simba Mbili curry powder is the most popular)
1/2 tsp turmeric
1/2 tsp coriander
1 tsp paprika
salt and black pepper, to taste

(Roast Meat) Preparation:


Method:

Combine the lemon juice, garlic and spices in a large non-metallic bowl and mix well. Add the meat and toss to coat with the marinade. Allow to marinate for at least 1 hour.

Grill the meat over charcoal or cook under a grill. cook for about 6 minutes per side and allow to rest for 10 minutes for medium rare. Cook longer if you wish the meat to be done more.

Serve with Ugali or Irio.
