Nyaba Recipe

Origin: Sudan      Period: Traditional

Ingredients

300g peanuts
2 bunches of ridgelar (these are traditional Sudanese greens, substitute a mix of watercress and spinach)
1 chicken stock cube
1 pinch salt

Nyaba Preparation:


Method:

Place the peantus in a blender and blend wih 1 tbsp water to produce a runny peantu butter. Chop the greens and place in a pan of water along with the chicken stock cube. Bring to a boil and cook for about 30 minutes, or until almost all the water has evaporated. Add the peanut butter and cook until just bubbling. Season with bring just to a boil before turning off the heat.

Serve warm or cool and eat with bread.
