Nothing Pudding Recipe

Origin: New Zealand      Period: Traditional

Ingredients:

This is a traditional recipe from New Zealand dating to the 1950s. It comes from a collection of family recipes given to me by a friend, and which I am only just now getting the time to properly redact.

180g flour
160g dried fruit
40g sugar
1 tsp mixed spice
1 tsp baking soda dissolved in 240ml boiling water
1 generous tbsp butter

Nothing Pudding Preparation:


Method:

Mix all the ingredients together (this will make a sloppy mixture), tie securely in a cloth place in a large pan of boiling water. Secure a lid and boil for 2 hours, topping-up the water as needed.

Serve hot with custard.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
