This is a traditional style of green Masala ideal for stuffing okra (for which purpose it is employed here). Ingredients
500g okra
North Indian Stuffed Okra Preparation:Method:First toast and whole spices in a dry frying pan. When they have coloured and are aromatic transfer to a coffee grinder and grind to a fine powder. Mix all the spices together and combine with the coriander leaves then set aside. Next prepare the okra (ladyfingers) by washing them and wiping them completely dry. Cut off the top and end of the okra then slit them down one side. Stuff the masala into this slit. Now heat the clarified butter in a pan and once hot add the okra to it. Stir-fry over high heat until the okra begin to look glossy. At this point lower the head and add 1tsp of lemon juice and mix well. Continue to cook on low heat for some eight minutes and add another teaspoon of lemon juice. Repeat the process once more. By the end the okra should retain some of their green colour and their shape but should be cooked through. Serve hot garnished with the chopped mint. |
