North African Beef with Green Beans Recipe

Origin: North Africa      Period: Traditional

Ingredients:

2 tbsp vegetable oil
900g beef brisket, cubed
2 onions, diced
1 green chilli, finely shredded
900g French (green) beans, trimmed and halved
120ml water
1 tsp allspice
1/2 tsp freshly-ground black pepper
1/2 tsp salt
400g tinned tomatoes (with liquid), chopped
360g tomato paste

North African Beef with Green Beans Preparation:


Method:

Add the oil to a frying pan and use to fry the beef until nicely browned (about 10 minutes). Stir-in the onions and chilli and fry for 2 minutes longer before adding the water. Bring to a boil, reduce to a low simmer, cover and cook for 15 minutes, stirring occasionally.

Add the green beans, allspice, black pepper and salt into the mixture and simmer, covered, for another 15 minutes before adding the tomatoes and tomato paste. Return to a simmer and cook, covered, for a further 45 minutes or until the sauce is nicely thickened.

Serve on a bed of rice.
