(Beef and Vegetable Stew) Recipe

Origin: Ghana      Period: Traditional

Ingredients

700g rolled beef shoulder cut into 2cm cubes
500ml water
2 tsp salt
1/4 tsp ground ginger
1 scotch bonnet or habanero chilli de-seeded and pounded to a paste
600g butternut squash pared and cut into 2cm cubes
2 medium tomatoes, chopped
300g cooked butter beans

(Beef and Vegetable Stew) Preparation:


Method:

Add the beef, water, salt, ginger and chilli in a casserole dish and bring to the boil. Reduce the heat, cover, and simmer for 90 minutes. Add the squash and cook, covered, for another 30 minutes. Remove the squash and mash then return to the casserole dish along with the tomatoes and beans.

Bring back to the boil, then reduce to a simmer, cover and cook for 15 minutes. Serve on a bed of rice.
