Ingredients:
500g beef or mutton
Nigerian Spiced Mixed Meat Pepper Soup Preparation:Method:Wash all the meat then cut the kidneys into small cubes and place in salted water to soak for an hour. Wash the diced tripe and place in a deep pot along with the cow's foot then add the chopped onions and chillies. Season with salt and add some water or stock and cook for between 45 minutes and an hour, or until almost tender. Drain the water from the kidneys and cook separately for 5 minutes then rinse and add to the pot of cooked meats. Add the pepper soup spices and stock then bring to the boil and cook for 15 minutes. Stir-in the crayfish and utazi (or dandelion) leaves and allow to simmer for 10 minutes. Season with salt and serve in soup bowls, garnished with chopped mint. |
