Nigerian Pancakes with Prawns Recipe

Origin: Nigeria      Period: Traditional

Ingredients:

450g white beans (any kind will do)
1 tbsp salt
250g fresh tomatoes cut into 0.5cm cubes
250g yellow onions
450g cooked prawns cut into 1cm lengths
1 tbsp salt
1/4 tsp black pepper
1/4 tsp cayenne pepper
6 large eggs, lightly beaten
120ml groundnut oil

Nigerian Pancakes with Prawns Preparation:


Method:

Leave the beans to soak over night. The following day drain and place in a large saucepan. Cover with fresh water and add 1 tbsp salt. Simmer slowly until tender, allow to cool and render to a paste in a food processor.

Add the tomatoes, prawns, salt, black pepper, cayenne pepper and eggs. Heat the groundnut oil in a large frying pan or wok. Drop heaped teaspoons of the prawn pancakes into the hot oil (they will spread out and flatten). Turn when the bottom is from and firm. Serve two pancakes per portion.
