Ingredients:
1kg nettle tops
Nettle Syrup Preparation:Method:Combine the nettle tops and water in a very large pan, bring to a boil and allow to boil, gently for 1 hour. Strain the liquid to remove the nettles then measure the volume and transfer back to a pan. Add 80g sugar per 100ml liquid, bring to a boil and continue boiling for 30 minutes, or until thick and syrupy. Allow to cool then bottle in sterile bottles. Traditionally this is used as a blood purifier, but it also makes and excellent drink if mixed with soda water and served over ice. |
