Ingredients
1/2 batch of Draniki pancake mix (do not cook)
Mushroom-stuffed Draniki Preparation:Method:Wash the dried mushrooms and soak in cold water for at least 3 hours. Wash the mushrooms once more then return to the original soaking liquid. Remove the mushrooms with a slotted spoon and transfer to a saucepan. Carefully pour the soaking liquid over the top (leave any sediment behind) then bring to a boil and cook for about 1 hour. Take off the heat and allow to cool a little then remove the mushrooms from the stock and mince as finely as possible (reserve the stock). Fry the onion in a little oil until golden then add the mushrooms along with 120ml of the mushroom stock and mix to combine. Prepare your Draniki pancake mix then take about a tablespoon of the mix, shape into a ball then flatten beneath tour hand and place a little of the mushroom mix on top. Cover with a second draniki and fry for about 4 minutes per side, or until golden transfer to a baking tray and finish the remaining draniki. Place in an oven pre-heated to 180°C and bake for about 5 minutes, or until heated through. Serve hot, accompanied by sour cream. |
