Mtedza Puffs Recipe

Origin: Malawi      Period: Traditional

Ingredients:

150g finely-chopped peanuts
100g butter
2 tbsp sugar
1/2 tsp vanilla
200g flour
icing sugar
1 pinch salt

Mtedza Puffs Preparation:


Method:

Cream together the butter and sugar. Add the peanuts, vanilla and flour. Roll the mixture into small balls and place on a greased baking sheet. Place in an oven pre-heated to 160°C and bake for 25 minutes. Remove from the oven and whilst still hot roll in icing sugar. Allow to cool and once cold roll in the icing sugar once more.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
