Mozambique Peri-Peri Recipe

Origin: Mozambique      Period: Traditional

Ingredients:

2 tbsp groundnut oil
1 tbsp lemon juice
1 samll red onion, minced
2 tsp minced garlic
12 dried African piri-piri chillies soaked over night
2 medium tomatoes, minced
1 tsp lemon thyme
1/2 tsp lemon zest
1 tbsp finely-chopped parsley
1 tsp paprika

Mozambique Peri-Peri Preparation:


Method:

Add the groundnut oil to a pan and fry the onions and garlic until soft. Drain the chillies and mince then add to the pan along with all the remaining ingredients. Cook until the tomatoes soften and the sauce thickens. Transfer to a bowl and serve as a dipping sauce or acocmpaniment. If you want to keep the sauce add 6 tbsp grondnut oil and contnue frying until all the water has disappeared. Store in a jar in the fridge.
