Moroko Recipe

Origin: South Africa      Period: Traditional

Ingredients:

675g spinach or Swiss chard
675g potatoes, peeled and quartered
1.5l chicken stock

Moroko Preparation:


Method:

Place the greens in the bottom of a large saucepan and place the potatoes on top. Add the chicken stock and bring to a boil. Reduce to a simmer, cover and cook for about 35 minutes, or until the potatoes are tender. Once the potatoes are done, drain off the majority of the liquid then mash the potatoes and greens together with a potato masher. Season and serve.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
