Moroccan Barbecued Chicken Recipe

Origin: Morocco      Period: Traditional

Ingredients

80ml olive oil
1 tsp finely-grated lemon zest
120ml freshly-squeezed lemon juice
2 tbsp fresh mint leaves, shredded
2 tsp garlic, minced
1/2 tsp hot paprika
1/4 tsp salt
1/4 tsp freshly-ground black pepper
4 chicken wings (snip off the tips)
4 boneless chicken thighs (with skin), halved lengthways
sliced lemon (for garnish)

Moroccan Barbecued Chicken Preparation:


Method:

In a large bowl combine together the oil, lemon zest, lemon juice half the mint, half the garlic, the paprika, salt and black pepper. Blend with a whisk then add the chicken pieces and mix with your hands until the chicken is completely coated. Leave to marinade for 20 minutes, then shake off any excess marinade, place under the grill and cook for about 7 minutes per side, turning once (they should be nicely browned and cooked through).

Transfer the chicken pieces to a platter. Arrange in a mound then garnish with the remaining mint and garlic. Add a sprig of mint and decorate with the lemon slices.
