Monastrika Corba
(Monastery-style Vegetable Soup) Recipe

Origin: Bulgaria      Period: Traditional

Ingredients:

800g cooked beans (any kind) [tinned is fine]
2 tbsp olive oil
200g tomato purée
2 small carrots, chopped
1 small celeriac, chopped
2 slices bacon, chopped
2 medium red chillies, chopped
8 large mint leaves, chopped
1 tbsp parsley, chopped
1l chicken stock

(Monastery-style Vegetable Soup) Preparation:


Method:

Heat the oil in a pan, add the bacon and fry for 2 minutes before adding the tomato purée, carrots, celeriac and chillies. Fry gently for 10 minutes then stir-in the stock, beans and mint. Bring the mixture to a simmer and cook for 10 minutes. Add the parsley and stir to combine then serve ladled into soup bowls.
