Millet Snacks Recipe

Origin: Chad      Period: Traditional

Ingredients:

400g millet flour (preferably freshly-ground)
200g wheat flour
250ml vegetable oil
80g icing sugar
1 egg

Millet Snacks Preparation:


Method:

Sift together the flours. Gently heat the vegetable oil and mix into the flours. Now add the sugar and egg into the dough and knead for five minutes until the dough firms up. Top onto a lightly-floured surface and roll to a thickness of about 5mm. Cut into ribbons and fry until golden brown in deep palm or groundnut oil.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
