Meshwiya Recipe

Origin: Tunisia      Period: Traditional

Ingredients

4 ripe tomatoes
1 green bell pepper
1 tsp salt
1 tbsp cumin
2 garlic cloves, crushed
2 tsp lemon juice
60ml olive oil

Meshwiya Preparation:


Method:

Grill the tomatoes and peppers then skin them. Chop into small chunks and add the salt, cumin and garlic. Before serving add the lemon juice and olive oil. Serve as a dip or spread on small chunks of baguette.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
