Meat and Potato Stew Recipe

Origin: Liberia      Period: Traditional

This is another of my wife's traditional Liberian dishes. The only difference between this and the dish she would normally cook being the additon of ox heart (mainly becuase this is one of my favourite meats). But all these recipes are highly-adaptible and can be made with the materials at hand.

Ingredients

500g ox liver, cubed
500g ox heart, cubed
6 potatoes, cut into large chunks
2 large carrots, cut into large chunks
6 garlic cloves, crushed
2 large onions, chopped
6 Scotch Bonnet chillies, pounded to a paste
400g French beans, trimmed and halved
1 small cabbage, cored and shredded
2 Maggi (or stock) cubes
2 tsp ground black pepper
2 tsp paprika
salt, to taste

Meat and Potato Stew Preparation:


Method:

Add some oil to the bottom of a metal casserole dish. Heat the oil and fry the garlic and onions for a few minutes. Add the chilli paste and fry for 1 minute more. Add the meat, stir-fry for 1 minute then cover the pan. Once the meat juices have been released add the vegetables and spices. Stir to combine then add just enough water to cover the ingredients. Bring to a boil, reduce the heat to a simmer and cover the pot again.

Allow to cook for about 20 minutes then test the potatoes with a sharp knife to ensure they are done. Season with the salt and serve in bowls.
