Mayoneza
(Greek Mayonnaise) Recipe

Origin: Greece      Period: Traditional

Ingredients:

2 egg yolks
pinch of sugar
1 tsp mustard
pinch of salt
pinch of white pepper
1 tbsp vinegar
250ml olive oil
1 tbsp lemon juice

(Greek Mayonnaise) Preparation:


Method:

Whisk together the egg yolks, sugar, mustard, salt, pepper and vinegar in a bowl. Whilst beating constantly and briskly add the oil drop by drop so that it emulsifies into the egg mix and the combination becomes thick and white. Whilst still beating constantly add the lemon juice a few drops at a time until it is all incorporated.

Serve immediately.

Whilst this mayonnaise can be made by hand (and there is something very satisfying in doing it this way) it is much quicker to use an electric whisk to make this.
