Matoke Recipe

Origin: East Africa      Period: Traditional

Matoke is the Ugandan for plantain and in Zanzibar, Kenya and Tanzania Matoke refers to plantains cooked with meat.

Ingredients:

10 plantains
juice of 1 lemon
1 onion, chopped
3 tomatoes, chopped
1 green bell pepper, chopped
4 garlic cloves, crushed
1 chilli pepper, chopped
salt, coriander and cayenne pepper to taste
450g minced beef
500ml beef stock
oil for frying

Matoke Preparation:


Method:

Peel the plantains and cut into rings. Sprinkle with the lemon juice and set aside.

Meanwhile heat some oil in a large pan, add the onion, tomatoes, green bell pepper, chilli and garlic together and fry. Add the spices to taste then add the meat and broth. Continue cooking, stirring all the while, until the meat is nearly done.

Reduce the heat and add the plantains. Cover the pot and simmer over low heat until the plantains are tender and the meat is done. Serve hot.
