Marmalade Muffins Recipe

Origin: New Zealand      Period: Modern

Ingredients

90g butter
90g sugar
2 eggs, beaten
120ml cup milk
185g flour
1 tbsp marmalade
1 tsp baking soda

Marmalade Muffins Preparation:


Method:

Cream the butter and sugar together until light and fluffy then add the beaten eggs and the marmalade and beat to incorporate. Next add the baking soda dissolved in the milk and finally add the flour. Combine gently then spoon into greased muffin tins, filling the wells no more than 3/4 full. Bake in an oven pre-heated to 190°C for about 15 minutes, or until coloured and springy to the touch.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
