Marak Dar Marhzin
(Pumpkin Stew) Recipe

Origin: Morocco      Period: Traditional

Ingredients:

3 tbsp oil
2 onions, finely chopped
2 garlic cloves, finely chopped
1 tsp ground turmeric
1 tsp ground cumin seeds
2 carrots, thinly sliced
2 baby turnips, peeled and quartered
700ml water
450g butternut squash (or pumpkin), peeled and cubed
450g sweet potatoes, peeled and cubed
1 tsp harissa
40g raisins
3 tsp honey
salt and freshly-ground black pepper, to taste
fresh coriander leaves, to garnish
lime wedges, to serve

(Pumpkin Stew) Preparation:


Method:

Add the oil to a large, heavy-based saucepan. When hot add the onion and cook gently for about 10 minutes, or until soft. Stir-in the garlic and spices and cook for 2 minutes further, stirring occasionally, before adding the carrots, turnips and water. Bring the mixture to a boil, reduce to a simmer then cover and cook for 10 minutes.

Now add the pumpkin, sweet potatoes, harissa, raisins and honey. Season with salt and black pepper then return the pan to a simmer, cover and cook for 20 minutes more, or until the vegetables are completely tender.

Serve piled on a bed of hot couscous then garnish with the coriander leaves and the lime wedges and serve.
