Mango and Halloumi Salad with Lamb's Lettuce Recipe

Origin: Britain      Period: Modern

Ingredients

500g Halloumi
150g wild Lambs Lettuce(or cultivated lamb's lettuce), washed and dried
60g roasted pine nuts
2 tbsp white wine vinegar
2 mangoes, peeled and sliced
3 tbsp olive oil
2 tbsp mint, chopped
salt and freshly-ground black pepper, to taste


Mango and Halloumi Salad with Lamb's Lettuce Preparation:


Method:

Slice the halloumi into generous pieces then arrange in an oven-proof dish then place under a hot grill (broiler) and cook until the cheese begins to bubble and turns a golden brown. Turn the slices over at this point and grill the other side.

In the meantime prepare the mangoes. When the cheese is ready arrange in alternating layers with the mango slices on 4 plates. Whisk together the vinegar and olive oil and use to dress the lamb's lettuce. Top the mango and halloumi slices with the dressed greens, season with salt and black pepper, top with the pine nuts then serve.
